  1. I love frittata! We make one that Giada de Laurentiis had on her show, with prosciutto, potatoes, basil, parmesan, and cream – not sure if it falls in that healthy snack category! (I just got back from a long weekend away so I, too, need to adjust back to a more normal eating pattern. I can’t have chocolate covered almonds every day…)

  2. Don’t you just love fritattas? I cook them quite often, and make them to use leftover veggies. Like you say, they’re healthful and tasty (although I have to say I usually have to have a glass of wine with mine). I use a lot of chard or kale in mine, as I always seem to have that in my fridge.

  3. We had some asparagus last night, too, but I will confess it went with some grilled red meat (finally the rain stopped and we could find the barbecue without an umbrella). We also like breakfast for dinner.
